Celery Root at its baby stage and before it develops the round swollen stem that is the usable part. We start our seeds in the greenhouse in February, transplant in March and April, and cannot begin harvesting until late August. It's a long term crop that requires many passes to weed over the growing season, but we feel it's worth the effort with its dense, celery flavor.
