Rightly eaten in most all countries in the world in many varieties or forms, spinach has a very high nutritional value especially when eaten fresh.  A serving can supply up to 20% of the daily recommended amount of iron, vitamin A, C, K, magnesium, manganese and folate. We sauté a chopped onion or shallot in olive oil and then stir in Spinach leaves until wilted for a super quick side dish.
